"In 1972, Houlihan's first opened its doors in Kansas City with a progressive, eclectic menu and energetic bar scene. Ferns hung throughout, artifacts cluttered the walls and tapestries made by San Francisco hippies formed the ceiling. Caviar burgers, roasted duck, foot-long hot dogs and fresh carrot juice were just a few original menu items so ahead for its time. It was hot.
Before long, there were a lot of 'casual dining' restaurants opening and call us crazy, but they looked a whole lot like us. We tried to be flattered. Some grew really big, and by the '90s, the whole 'casual dining' landscape was pretty me-too. Instead of watching the consumer, the industry seemed more worried about what competitors were doing. Casual dining lost its way, and in doing so lost its edge.
Fast forward to 2002. That's when we had our 'Aha!' moment (as Oprah would say). New leadership, new ideas, new inspiration. We completely re-imagined ourselves, and got back in touch with the consumer. New menus. New plates. New building design, new soundtrack. Stylish uniforms. And a modern, warm restaurant design with an open kitchen and prominent bar. Today, our company is built entirely around what the progressive consumer seeks in a restaurant + bar experience. And we plan to keep it that way.

"Harry Roth and Izzy Rosen were longtime friends. They met at the age of 10 and continued their friendship throughout high school. They attended Old Manual High in Indianapolis. Izzy was a good student. At the age of 13, he worked outside at the City Market selling produce and meats with his mother after his father passed. Harry attended Monroe College of Optometry and lived in Chicago's Loop area. In 1946, Harry's brothers Sam and Ike purchased St. Elmo Steak House, and shortly after, invited Harry to become a partner in the restaurant. He borrowed $10,000, said, "Farewell" to Chicago - "going from eye glasses to bar glasses" - and returned to his stomping grounds. Meanwhile, Izzy was still in Indy, now working as a bookie. In 1956, Sam and Ike left the business, and Harry asked his longtime friend Izzy to join him as a 50/50 partner in St. Elmo. Harry always wore brightly colored and patterned bow ties, which he wore in lieu of long ties; this to appease his wife, who was not fond of him coming home with cocktail sauce staining the long ties he wore when he started working at St. Elmo. Kindly, warm and charming, Harry is the perfect antithesis of his friend and business partner, Izzy. A man of few words, behind Izzy's large personality and even larger cigars, was a man's man. Harry and Izzy were the quintessential "Odd Couple." The story of The Claddagh begins with an American Restaurateur taking a job across the pond with an Irish Restaurateur. The American moves with his wife to the Emerald Isle, where he lives and works for the next two years. Although they both fall for the charm and friendliness of the pubs of Ireland, they knew their place was back in the States with their families and friends. At this time the American had an idea, which was to bring the best of what Ireland had to offer to the States. The American knew that although there were some “authentic” Irish pubs already in the States, he also knew that few brought the “Craic” of the Irish to their pubs. “Craic” (pronounced “crack”) means a fun, friendly, and exhuberant environment. He also knew that few brought the great food that so many of the true Irish pubs had to offer.
